The best blueberry muffins - recipe

 Ingredients for 12 muffins:

  • 200 grams of wheat flour
  • 100 -150 grams of sugar according to your taste
  • 2 tablespoons of baking powder
  • zest from half of a lemon
  • a bit of salt
  • 60 grams of butter
  • 60 milliliters of sunflower oil
  • 240 grams of fresh cream
  • 1 egg
  • 200 grams of fresh blueberries



First, preheat the oven at 220 degrees Celsius.

Beat the butter at room temperature with the sugar, the egg, the sunflower oil and the fresh cream.



Over this mixture add the flour, the baking powder, the salt and the lemon zest, and mix well.

Clean the fresh blueberries and sprinkle a bit of flour over them. Then incorporate them in the mixture. 


Put the composition in a muffin tray and let it bake for about 8 minutes at 220 degrees Celsius and then lower the temperature at 175 degrees and let them bake for another 15 minutes.


When done, let them cool in the oven for 10 minutes with the door open.

Then take the muffins out of the muffin tray and let them cool on a rack.

When cooled, store them in the fridge in a glass box. They are excellent even after 2 days.

Banana and yogurt muffins - recipe with step-by-step photos

Ingredients for 12 muffins:
  • 300 grams of yogurt
  • 150 grams of butter
  • 100 grams wheat flour
  • 50 grams brown sugar
  • 2 ripe bananas
  • 2 eggs
  • 1 spoon baking powder
  • a bit of salt



Beat the eggs with the sugar until they double the volume.
Add the bananas and beat for another minute.


Add the melted cold butter, the yogurt and the salt and mix well.


Mix the flour with the baking powder and add it over the beaten eggs/yogurt composition.
Mix until well incorporated.


Bake it in the preheated oven at 180 Celsius degrees for 30 minutes.

Blackberry muffins - recipe with step-by-step photos

Ingredients :
  • 200 grams of flour
  • 180 grams of yogurt
  • 150 grams of fresh blackberries
  • 80 milliliters of sunflower oil
  • 50 grams of sugar
  • 1 spoon baking powder
  • 1 egg

Ingredients for the crumble:
  • 20 grams of butter
  • 30 grams of sugar
  • 30 grams of flour




Preheat the oven at 200 Celsius degrees.

First make the crumble:
Mix the butter with the sugar and the flour.


Prepare the muffins:
Mix the egg with the yogurt, the sugar and the sunflower oil.


Add the flour previously mixed with the baking powder and mix until well incorporated.


Add the blackberries and mix slowly until well incorporated.


Put the composition in a muffin tray and add the crumble above each muffin.

Put the tray in the preheated oven for 15-20 minutes or until done.

Cheese apple muffins - recipe with step-by-step photos

Ingredients for 13 muffins:
  • 250 grams of fresh cheese
  • 250 grams wheat flour 
  • 150 grams of diced apples
  • 100 grams of brown sugar
  • 100 milliliters of milk
  • 100 grams of butter
  • 16 grams of baking powder
  • 3 eggs
  • 1 spoon with lemon juice
  •  a bit of salt
  • a bit of cinnamon

Beat the butter with the sugar and the salt.


Add the eggs one by one and beat after each one of them until well incorporated.


Add the fresh cheese, the lemon juice and the milk and mix until well incorporated.


Separately mix the flour with the baking powder.


Incorporate the flour into the butter/eggs composition.


Clean and slice the apples. Add the apples cubes and some cinnamon powder into the mixture.


Put the composition in a muffin tray and bake it at 190 degrees Celsius for 25 minutes or until done.

Pear muffins - recipe with step-by-step photos

Ingredients for 12 muffins:
  • 4 pears 
  • 200 grams of wheat flour
  • 100 milliliters of milk
  • 70 grams of fresh cream
  • 50 grams of honey
  • 50 milliliters of sunflower oil
  • 2 eggs
  • 1 teaspoon of baking powder
  • a few walnuts
  • a bit of nutmeg
  • a bit of cinnamon powder
  • a bit of vanilla sugar
  • a bit of salt




Preheat the oven at 200 degrees Celsius.

With a fork, beat the eggs for a few seconds.

Add the sunflower oil, the milk, the honey, the fresh cream, the chopped walnuts, 3 grated pears and 1 chopped pear and mix until well incorporated.


In another bowl, mix the flour with the cinnamon, the nutmeg, the salt, the vanilla sugar and the baking powder.

Add the flour composition over the egg/milk composition. Mix everything until well combined.
 

Pour the composition in the muffin cups and bake it for 15 - 20 minutes or until done.

If you like more walnuts, before baking you can spread some finely crushed muffins on top of the muffins.
