Hungarian cheese strudel - recipe with step-by-step photos

The best we made so far. And quite easy to do it yourself.

Ingredients for the dough:
  • 280 grams of wheat flour
  • 100 milliliters of warm water
  • 80 grams of fresh cream
  • 50 grams of butter
  • 1 egg yolk
  • a bit of salt

Ingredients for the filling:
  • 800 grams dried cheese
  • 5 eggs
  • 4 spoons with sugar
  • 3 spoons with milk
  • some raisins
  • butter for greasing

From this quantities you will obtain 4 strudels.


Prepare the dough:

Strain the flour. This way the dough will be fluffy.


In the middle of the flour make a hole and add the warm water, the egg yolk, the salt, the fresh cream and the melted butter.

 

Mix everything until you obtain a firmly, non sticky dough.
Let it rest at room temperature, covered with a towel.
 


Prepare the filling:

Mix the cheese with the raisins, the sugar, the eggs and the milk.


Assembly:

Divide the dough in 4 equal parts.

Spread one on the table, as thin as you can. Preferable very thin :)
Add a quarter of the cheese mixture on top and roll.

Repeat the operation with the other 3 parts of the dough.


Grease an oven pan with some butter and add the 4 rolled strudels.
Above each one, add some more butter.


Put the tray in the oven at 180 Celsius degrees for 30-40 minutes or until ready.
