Esterhazy cake - recipe with step-by-step photos

Ingredients for 5 layers:
  • 200 grams of ground walnuts
  • 100 grams of sugar
  • 9 egg whites
  • a bit of salt

Ingredients for the filling:
  • 400 milliliters of milk
  • 200 grams of butter
  • 30 grams of sugar
  • 5 egg yolks
  • 2 tablespoons with flour
  • a bit of vanilla sugar

Ingredients for the glaze:
  • apricot jam (according to taste)
  • 120 grams of powdered sugar
  • 50 grams of dark chocolate
  • 4-5 spoons with lemon juice



Prepare the layers:

Beat the egg whites with the sugar until stiff peaks.


Add the ground walnuts and the salt and mix.


Divide the composition in five equal parts.

Bake the layers (18 cm in diameter) at 200 Celsius degrees for 8-10 minutes or until done. You can bake 2 at the time if the oven is big enough.

Let them cool!


Prepare the filling:

Beat the egg yolks with the sugar.

Add the flour and the vanilla sugar and mix until well incorporated.


Meanwhile heat the milk.

When warm pour it in the egg yolks composition a bit at the time mixing continuously.

Put the obtained composition on medium fire and mix until creamy like a pudding.
Let it cool!


When cooled add the butter a bit at the time. Beat well until you have a nice creamy filling.

Assembling the cake:

On a plate, add one layer then a bit of filling. Cover with another layer and so on until the last one. Keep a bit of filling for decoration.


The last layer will be covered with apricot jam.
Cover the sides of the cake with the remaining filling. Put it in the fridge for a few minutes.


In the meantime, make the glaze:

Mix the powdered sugar with the lemon juice until you have a slightly fluid glaze.
Pour it on top of the cake.


Melt the chocolate and let it cool a bit.
Pour the chocolate in a piping bag and with it make straight lines on the white glaze.
Whit a toothpick pass trough the chocolate lines and the white glaze.

Keep in a cold place until served.
