Homemade French baguette - recipe

Ingredients for 3 baguette:
  • 400 grams of wheat flour
  • 320 milliliters of water
  • 15 grams of fresh yeast
  • a bit of sugar/honey
  • salt

Mix the fresh yeast with sugar/honey.

Put the flour in a bowl. Make a hole in the middle of the flour and add the warm water and the yeast.

Start mixing with a spoon. Add the salt and mix.

Make a sticky, soft dough.


Cover the bowl with a plastic foil and leave it in a warm place for 1 hour.


Divide the dough in 3 equal parts.

Spread some flour on the table and on your hands and start flatting the dough with your hands.
 

Now you should have the dough spread on the table, having the size of a desert plate.

Start rolling the dough from one side to the other. Fold it step by step, sealing with your fingers after each roll like in the photo. Make sure that the length of the baguette will fit the size of your baking tray.

With the sealed side down, place the baguette on a baking paper in the tray.


Repeat the operation with the other 2 pieces of dough.


Let them rest for 20 minutes.
In the meantime, preheat the oven at 250 Celsius degrees.


Grease each baguette with cold water and make 3-4 slashes on each baguette.



On the lowest rack of the oven, add an iron tray or the oven tray with water.

Add the tray with the baguettes on the middle rack.

Bake for 30 minutes or until golden brown.

When open the oven door be careful at the steam!
