Pösiga plättar (hirams) or Swedish pancakes - recipe with step-by-step photos

Ingredients:
  • 300 milliliters of water
  • 200 grams of fresh cream
  • 100 grams of butter
  • 100 grams of flour
  • 4 eggs
  • salt



Melt the butter. Then add the water and the flour and mix until thick like for the eclairs.



Add the egg yolks one by one and mix well after each one. Let the composition cool.


Beat the egg whites with a bit of salt.


Beat the fresh cream until stiff.


Slowly incorporate the beaten fresh cream and then the beaten egg whites into the egg yolks composition.



In a frying pan add a spoonful of composition and let it cook only on one side at medium to high fire.


When ready, stick two pancakes along the raw side.



Now put these pre-cooked  pancakes in the preheated oven at 200 Celsius degrees for 8-10 minutes.


Very good with jam or maple syrup.
