Homemade apple turnover - recipe with step-by-step phtos

From the ingredients below you can make about 30 pieces of apple turnovers.

Ingredients for the dough :
  • 300 grams of flour
  • 125 milliliters of warm milk
  • 50 grams of sugar
  • 20 milliliters of sunflower oil
  • 10 grams of fresh yeast
  • 1 egg
  • zest from half of a lemon
  • a bit of vanilla sugar
  • a bit of salt
For to enrich the dough:
  • 150 grams of butter
  • 50 grams of flour
Ingredients for the filling:
  • 50 grams of sugar
  • 4 apples
  • lemon juice
  • and 1 egg yolk for brushing




First make the dough:
Mix the fresh yeast with 1 spoon of sugar. Add half of the warm milk and let it rest for 10 minutes.



Mix the egg with the sugar for a minute, using a fork.


Add the salt, the vanilla sugar, the sunflower oil, the milk/yeast mixture and the other half of the milk. Mix for a minute until everything is well incorporated.


Add the composition over the wheat flour. Add the lemon zest and mix for a minute until you have a nice smooth dough. Don' t mix it more because your dough will get hard to handle after.


Let it rest for an half of an hour in a warm place.


"Enrich" the dough:
Mix the butter with the flour. Then spread this mixture on a baking paper and above press another sheet of baking paper, just enough to have a thick rectangle, not more. Fold it with the baking paper and let it in the fridge for 30 minutes.


After the time has passed, spread the dough on the table in another thick rectangle. On half of the dough, add the butter mixture and press above the other part of the dough.


Try to close it without too much air.


Then place the dough with the side opening to the right and press it a bit from top to bottom.


Fold a third from the upper side downwards, then a third from the down side upwards. Put it like this in the fridge for 45 minutes.


Take out the dough from the fridge and repeat the process (press then fold). Put it in the fridge for another 45 minutes.

Repeat the operation one more time and let it in the fridge for another 45 minutes.


When ready, you will have a beautiful puffy dough .


Prepare the filling:
Clean and cut the apples in small cubes.
In a pot add the apples, the lemon juice and the sugar and let them simmer for 5-10 minutes at slow fire until the apples are moist. Let it cool!


Spread the dough on the table and with a cup make round shapes.


Spread each shape and in the middle and add one teaspoon with apples in the centre.


Close the borders and seal it with a fork. Brush them with an egg yolk and put them in the fridge for at least 30 minutes, preferable 1 hour.

Take them out from the fridge, brush them again with a bit of egg yolk  and make some cuts above each turnover, using a knife.


Make two holes in the back of the turnover (like in the photo below) to avoid them bursting open during baking.

Put them in a tray covered with baking paper and let them bake in the preheated oven at 190 Celsius degrees for 20-25 minutes or until golden brown.
