- 160 grams of wheat flour
- 150 milliliters of milk
- 150 milliliters of sparkling water
- 20 milliliters of sunflower oil
- 1 egg
- a bit of salt
Ingredients for the filling:
- 200 milliliters of fresh cream
- 30 grams of cheese
- 20 milliliters of olive oil
- 2 chicken legs
- 2 onions
- 1 clove of garlic
- some paprika
- thyme
- pepper
- salt
Prepare the pancakes:
Beat the egg with the salt for a minute.
Add a quarter of the flour and mix. Add half of the milk and mix.
Add the remaining flour and mix. Add the remaining milk and the sparkling water and mix until well incorporated. Add the sunflower oil and mix.
Heat a frying pan and cook the pancakes at high fire.
Prepare the filling:
Heat half of the olive oil and add the chopped onions and the crushed garlic and fry until yellow.
Add the remaining olive oil and the chicken (deboned and chopped in small pieces) and let it cook for 5 minutes, mixing from time to time.
Add some salt, pepper and some thyme and let it cook for another minute.
Add half of the fresh cream and the grated cheese and let it cook for another minute until the cheese melts.
The composition will fill 9-10 pancakes.
Grease an oven pan with some olive oil or butter.
Fill each crepe with some of the filling and put it in the pan. Continue until you finish the composition.
Add the remaining fresh cream on top of the pancakes, spread some paprika on top and put it in the oven at 180 Celsius degrees for 20 minutes.
Can be served with some basil or fresh parsley.
