Homemade pistachio biscuits - recipe with step-by-step photos

While in Brussels, we ate some pistachio biscuits and we liked them so much, that we decided to give it a try. The result was some flavored homemade biscuits.

 Ingredients for 15-17 biscuits:
  • 200 grams of wheat flour
  • 100 grams of butter at room temperature
  • 90 grams of ground pistachio
  • 50 grams sugar
  • 1 egg
  • a bit of salt


First ground the pistachio.

After you´ve done that, mix 70 grams of pistachio with half of the sugar, the salt and the egg and blend everything for a minute.


Beat the butter at room temperature with the other half of sugar until fluffy.
Add the pistachio composition and mix well.


Add the flour gradually and mix until you obtain a non sticky dough.


Roll the dough in plastic film and put it in the freezer for 10 minutes.

Preheat the oven at 180 Celsius degrees.

On a sheet of parching paper spread the remaining grounded pistachio and put the rolled dough above. Roll it over the pistachio until you have nice pistachio edges.


Cut the dough in 2 cm pieces. Put the biscuits in the preheated oven for 15-20 minutes or until done.
