Speculoos biscuits - recipe with step-by-step photos

Ingredients :
  • 370 grams of wheat flour
  • 200 grams of butter
  • 100 grams brown sugar
  • 1 egg
  • a pinch of cinnamon
  • a pinch of ginger




Mix the sugar with the butter at room temperature and the egg.
Add the cinnamon and the ginger and mix.


Incorporate the flour a bit at the time and make a non sticky dough.
Let the dough rest for at least 5 hours in the fridge, preferable over night.


Preheat the oven at 175 Celisius degrees.
Divide the dough in 2 equal parts. Spread one part on the table and make the biscuits using shapes you already have in the house.


Bake the biscuits for 10 - 15 minutes or until golden brown. Let them cool!


The biscuits can be kept crunchy in a metal box for a while (like the ones from the supermarkets).

Apple and pear filled biscuits - recipe with step-by-step photos

Easy to make and to eat :))

Ingredients for about 20 biscuits:
  • 350 grams of flour
  • 200 grams of butter at room temperature
  • 200 grams of fresh cream
  • 50 grams of sugar
  • 1 teaspoon of baking powder
  • a bit of vanilla sugar
  • a bit of salt
  • 3 apples
  • 5 pears



Mix the butter with the fresh cream and the vanilla sugar.


Separately mix the flour with the baking powder and then incorporate it slowly into the butter/fresh cream composition.

Make a non sticky dough.

Put it in the fridge to rest while you prepare the filling.

Clean and grate the apples and the pears. Put half of the sugar above them and mix. Let them strain for  a couple of minutes.


Take out the dough from the fridge and divide it in two equal parts.

Spread one part on the table as thin as you can.

Now, in a corner of the dough add the half of the strained filling (apples/pears) and spread above half of the remaining sugar.


Roll the dough and cut it in pieces of 3-4 cm.


Put them in a tray and let them bake in the preheated oven at 200 Celsius degrees for 30 minutes or until done.

Repeat the process with the other part of the dough.


When ready let them cool and then spread some powdered sugar above.

Homemade pistachio biscuits - recipe with step-by-step photos

While in Brussels, we ate some pistachio biscuits and we liked them so much, that we decided to give it a try. The result was some flavored homemade biscuits.

 Ingredients for 15-17 biscuits:
  • 200 grams of wheat flour
  • 100 grams of butter at room temperature
  • 90 grams of ground pistachio
  • 50 grams sugar
  • 1 egg
  • a bit of salt


First ground the pistachio.

After you´ve done that, mix 70 grams of pistachio with half of the sugar, the salt and the egg and blend everything for a minute.


Beat the butter at room temperature with the other half of sugar until fluffy.
Add the pistachio composition and mix well.


Add the flour gradually and mix until you obtain a non sticky dough.


Roll the dough in plastic film and put it in the freezer for 10 minutes.

Preheat the oven at 180 Celsius degrees.

On a sheet of parching paper spread the remaining grounded pistachio and put the rolled dough above. Roll it over the pistachio until you have nice pistachio edges.


Cut the dough in 2 cm pieces. Put the biscuits in the preheated oven for 15-20 minutes or until done.

Walnut rolled biscuits - recipe with step-by-step photos

Ingredients for about 30 biscuits:
  • 150 grams of flour
  • 80 grams of butter
  • 70 grams of walnut kernels
  • 50 grams of fresh cream
  • 40 grams of sugar
  • 1 egg
  • half of a teaspoon with dried yeast
  • a bit of salt



Separate the egg white from the egg yolk.

Beat the egg yolk with half of the sugar and the salt until it doubles the volume.

Add the melted butter, the fresh cream and the dried yeast and beat for a few seconds until everything is well incorporated.


Incorporate the flour a bit at a time. Do not put a lot of flour at once because then the dough will crumble.

Make a non sticky dough and put it in the fridge for at least 1 hour.


Divide the dough in 4 equal parts.

Start with spreading one on the table, as thin as you can.


Meanwhile, beat the egg white with the remaining sugar. When forms stiff peaks, add the crushed walnuts and mix.


Divide the egg white composition in 4 equal parts.

Spread one part on top of the dough already spread on the table.


Roll the dough and cut small biscuits, as shown in the photo.


Repeat the operation with the remaining dough layers and walnut mixture.

Put the biscuits on a baking paper in an oven tray and let them bake in the preheated oven at 180 Celsius degrees for 15 minutes.

When ready let it cool and then spread some powdered sugar above.
