Round cheese pie - recipe with step-by-step photos

Ingredients for the dough:
  • 330 grams of wheat flour
  • 250 milliliters of warm water
  • 120 grams of butter
  • a bit of salt

Ingredients for the filling:
  • 800 grams of fresh cheese
  • 100 grams of sugar
  • 3 eggs
  • salt


Prepare the dough:
Mix the flour with the salt.
Make a whole in the middle of the flour and add the water little by little.
Start mixing the flour with the water until you have a non sticky dough.


Cover the dough in a plastic foil and let it rest in the fridge for 30 minutes.


Take out the dough and divide it in 6-7 equal pieces. Divide the butter in as many parts as the dough.


Spread one piece of dough on the table and spread one part of the butter at room temperature.


Now, fold the dough as you see in the pictures bellow.





Repeat the operation with each one of the other pieces of dough and put them in the fridge to rest for 4 hours.


Prepare the filling:
Mix the cheese with 2 eggs, the sugar and a bit of salt.


Preheat the oven at 190 Celsius degrees.

Take out the dough from the fridge and start making your pie.

Spread one piece of the dough on the table.

Add a few spoons with cheese mixture and spread it over the entire surface of the dough.


Roll the dough and then make a snail shape out of the rolled dough.


Put it in the oven tray. Repeat the operation with the other pieces of dough and roll them around the first dough snail you made.

We prepared 2 pies, one using 3 pieces of dough and the other using 4 pieces of dough.


Beat the remaining egg and brush it over the pie.

Bake the pie for 40 - 45 minutes or until ready.

Hotel review - NH Bologna Villanova, Italy

The room was clean and the bed comfortable.

Good breakfast. Free WIFI and a few free parking places around the hotel.

Hotel review - Hotel Leitner, Rio di Pusteria, Italy

Some of the rooms are OK, but many are not that nice to really feel like a well-deserved vacation.

The bathrooms had no intimacy, with full-glass walls.

The breakfast was good, with fried eggs or ommelette, cheese, ham, butter, jam, croissants.

In the afternoon they don´t have snacks and cakes as it is the usual practice for package holidays in Alto Adige.

Involtini di melanzane con mozzarella di buffala / Eggplant rolls with mozzarella

Ingredients for 3 servings:
  • 500 grams of mozzarella
  • 1 eggplant
  • 100 milliliters of tomato juice
  • 50 milliliters of olive oil
  • 2 cloves of garlic
  • 1 tomato
  • salt
  • pepper
  • basil



Clean and cut the egg plants in long slices as thin as you can.

Spread some salt above them and let them strain for 30 minutes.


Meanwhile, heat a bit of olive oil in a frying pan.

Add the slices of egg plant and let them fry on both sides for a few minutes at high fire.

Continue to add olive oil every time you add some new slices of egg plant in the pan. 


Make a roll from each eggplant slice: put a mini-mozzarella piece in the middle of each slice and cover it with the edges of the slice. Set all the eggplant rolls in a baking pot.

Meanwhile, in another pot, add 1 spoon with olive oil and the crushed garlic.
 
Then add the chopped tomato. Let it simmer for a few minutes until tender.


Add the tomato juice, the salt, the pepper and the basil and let it simmer for 5 minutes.


Pour the tomato composition over the eggplant rolls and put them in the oven at 180 Celsius degrees for 15 -20 minutes .

Pumpkin panna cotta

Ingredients for 3 servings:
  • 250 milliliters of milk
  • 50 grams of fresh cream
  • 50 grams of pumpkin
  • 30 grams of sugar
  • 3 grams of gelatin
  • half of a vanilla stick
  • a bit of salt



First cut the pumpkin in thin slices, spread 10 grams of sugar on the sides of the slices and put then in an oven tray covered with baking paper. Let them bake in the oven at 180 Celsius degrees for a few minutes until the sugar caramelizes. Let it cool!

In a pot, add the milk, the salt, the vanilla stick, 20 grams of sugar and the fresh cream and put them at slow fire until the sugar dissolves.

Separately hydrate the gelatin for a few minutes in cold water .

After the sugar has dissolved, take away from fire and let the milk cool a bit. While still warm add the hydrated gelatin and mix until dissolved. Take out the vanilla stick.


Separately mash theslices of pumpkin with 2 spoons of milk.


Strain the blended pumpkin over the milk and mix until well incorporated.

Pour the composition in cups and let it in the fridge for a few hours before serving it.
